
Pork & Pepper Skillet
Pork strips with peppers and mushrooms in a light Dijon, honey and stock sauce.

Ingredients
- 900 gPork, loin/tenderloin strips
- 300 gRed pepper
- 200 gYellow pepper
- 180 gOnion
- 250 gMushroom
- 2Garlic
- 25 mlCooking oil
- 150 mlStock
- 20 mlMustard, Dijon
- 15 gHoney
- 15 mlLemon juice
- 1 tspThyme, dried
- 1 tspPaprika, sweet
- ½ tspSalt
- Black pepper, to taste
- 15 gParsley

Method
Slice the pork into strips. Slice the red and yellow peppers, onion and mushrooms, and crush the garlic. Season the pork with salt and black pepper. Sear it in batches in some of the oil, then remove it from the pan.
Add the remaining oil and cook the peppers, onion and mushrooms until they begin to soften. Add the garlic, dried thyme and sweet paprika.
Stir in the stock, Dijon mustard and honey. Return the pork and simmer briefly until the pork is cooked through and the sauce reduces lightly.
Finish with lemon juice and parsley.
