
Chicken Quesadillas
Skillet-crisp tortillas filled with cooked chicken, peppers, onion, corn and melted cheese.

Ingredients
Filling
- 600 gChicken, cooked, shredded
- 250 gRed pepper
- 150 gOnion
- 150 gCorn
- 1 tspPaprika
- ½ tspCumin
- Black pepper
Assembly
- 6 largeTortilla
- 240 gCheese, grated
- 10–15 mlCooking oil
Optional additions
- Lime (optional)
- Fresh tomato (optional)
- Yogurt, plain (optional)

Method
Slice the red pepper and onion. Cook them in a skillet until softened, then stir in the paprika, cumin and black pepper. Combine with the cooked shredded chicken and corn to make the filling.
Divide the filling and grated cheese among the large tortillas and fold them over. Cook in a skillet with the oil until the tortillas are golden and the cheese has melted.
Add optional lime, tomato or plain yogurt if using. For later assembly, keep the filling separate and assemble the quesadillas when ready to cook.
