Beef & Mushroom Couscous Bowls

Couscous topped with beef and mushrooms in a Dijon-soy sauce, finished with parsley.

Serves 6

Ingredients

Beef and mushrooms

  • 800 gBeef strips, quick-cooking
  • 400 gMushroom
  • 180 gOnion
  • 2Garlic
  • 20 mlCooking oil
  • 1 tspPaprika
  • 1 tspThyme, dried

Sauce

  • 200 mlBeef stock
  • 20 mlMustard, Dijon
  • 10 mlSoy sauce
  • 10 mlLemon juice
  • Salt, to taste

Couscous

  • 360 gCouscous
  • 420 mlStock
  • 10 mlCooking oil
  • 15 gParsley
  • Black pepper, to taste

Equipment

  • Frying pan
  • Pot

Method

  1. Slice the mushrooms and onion and crush the garlic. Sear the quick-cooking beef strips in some of the beef-group oil, then remove them from the pan.

  2. Add the remaining beef-group oil and cook the mushrooms, onion and garlic until tender. Stir in the paprika and dried thyme.

  3. Mix in the beef stock, Dijon mustard, soy sauce and lemon juice. Return the beef and cook briefly until it is cooked through. Taste before adding salt.

  4. Prepare the couscous separately with its stock and oil, then fluff it. Add the parsley and season with black pepper. Spoon the beef and mushrooms over the couscous.
